This soft and moist Honey Cake Roll is easier to make than any cake, filled with delightful sweetened condensed milk frosting and sprinkled with hazelnuts for a nutty flavor. This dessert is a family favorite and a big hit in your next party!
FOR THE HONEY ROLL CAKE:
4 large eggs (separate the yolks and egg whites)
¾ cup flour
¼ teaspoon baking soda
3 tablespoons honey
¼ cup milk
½ cup granulated sugar
FOR THE CONDENSED MILK FROSTING:
1 cup cream cheese
2 teaspoons powdered sugar
Almond and macadamia nuts, to decorate
TO MAKE THE HONEY ROLL CAKE:
Preheat the oven to 350°F (180°C). Line a roll cake pan with parchment paper.
In a medium bowl, mix 4 egg yolks, flour, baking soda, honey and milk until fully combined. Set aside.
In a separate bowl, beat only 3 egg whites and sugar until stiff peaks. Then slowly fold the yolk mixture in until incorporated.
Spread evenly onto to prepared baking pan. Bake for 13 minutes until a toothpick inserted comes out clean and the cake springs back in the center.
Let cool 5 min. in the pan before removing. Place cooling rack over the cake pan, flip cake over onto the rack, gently remove the paper. The side facing up will eventually become the top of the cake roll. Let it sit on the cooling rack for 5 min.
Place a new of parchment paper on top of the cake.
Flip the cake over and start rolling, allowing the parchment paper to be in between the folds. This will prevent the cake from sticking to itself. It's important to roll the cake before it cools completely, otherwise, it will crack while rolling.
TO MAKE THE CONDENSED MILK FROSTING:
In a mixing bowl, beat the cream cheese, sugar, condensed milk and vanilla until smooth. Add the whipping cream and continue to beat until the frosting is smooth.
Place the cake on the counter, unroll and loosen from the parchment.
Spread the frosting on the cake evenly and roll the cake back again. Slice off the edges to make ít nice and clean. Dust with powder sugar, decorate with the remaining frosting and put almond and macadamia nuts on top and serve.
