FOR THE CANDIED ORANGE:
2 orange ,slice thinly
½ cup sugar
1 ½ tablespoons water
FOR THE CHOCOLATE BROWNIES:
3 egg whites
¼ cup sugar
200gr melted chocolate
⅓ cup flour, sifted
2 tablespoons cornstarch, sifted
¾ teaspoon baking powder
½ cup almond flour, sifted
20gr diced orange
TO MAKE THE CANDIED ORANGE:
Into a non-stick pan, add the sliced orange, sugar and water and bring to a boil. Keep stirring until the water has almost evaporated.
Remove from the heat and let cool for 7 minutes.
TO MAKE THE CHOCOLATE BROWNIE:
Preheat the oven to 355°F (180°C). Line a 9x9-inch baking pan with oil spray.
Chop 200gr of dark chocolate into small pieces, melt them using a microwave or a double boiler.
Into a large bowl, beat the egg whites with sugar with a hand mixer until stiff peaks form.
Then add the melted chocolate into the meringue, keep mixing when you add the chocolate, mix until combined.
Fold the flour, cornstarch, baking powder, almond flour. Once combined, add diced orange and give it a final mix. Transfer the mixture into the prepared baking pan. Put the candied orange on top.
Bake for 30-35 minutes or until the toothpick comes out clean. The brownies can be stored in the refrigerator in an airtight container for up to 4 days.
