INGREDIENTS:
FOR THE COOKIES:
1 large egg
½ cup honey
1 teaspoon vanilla extract
2 tablespoons coconut oil
⅔ cup whole wheat flour
1 cup oats
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking powder
⅓ cup shredded carrots
2 tablespoons chopped pecan
3 tablespoons raisins
¼ cup diced pineapple

TO MAKE THE COOKIES:

Preheat the oven to 325ºF. Prepare a baking sheet and line with parchment paper. Set aside.

Into a medium bowl, add egg, honey, vanilla extract and coconut oil, whisk well to combine. Add whole wheat flour, oats, salt, cinnamon, baking powder and mix until well combined. Fold in the shredded carrots, chopped pecans, raisins and diced pineapple.

Scoop the batter into the baking sheet. Bake for 14 minutes or until set.
